Bone-in thighs, however, take a bit more time, between 25 and 30 minutes. Use a thermometer to measure the internal temperature of the thighs. They're finished cooking when the temperature reads 165°F.
How do you tell when fried chicken thighs are done?The amount of frying time will vary so I recommend using a meat thermometer to test doneness. Any cut of chicken should register 165 degrees F on a digital thermometer.

The chicken is fully cooked when the thickest part of the meat registers at 165° and the skin is crispy and dark golden-brown in color.
