I’ve been obsessed with these cookies for more than a decade, and I’ll never let them go.

When it comes to snacks, few stores do it like Trader Joe’s. Whether your tastes lean sweet or savory, you can find an impressive assortment of delectable items to munch on down almost every aisle at TJ’s.

Me? I’ve had a decade-long love affair with a Trader Joe’s classic: Laceys Cookies. They’re a take on the classic Florentine lace cookie, which is essentially a thin wafer made of toffee, often festooned with chopped nuts and chocolate.

Laceys' recipe improves on the original by sandwiching melted chocolate between two of the thin toffee wafers, thus creating a super-mega-cookie that is crispy, chocolaty, and melt-in-your-mouth perfection.

They’re available in two varieties: milk chocolate macadamia nut and dark chocolate almond. I’m partial to the dark chocolate version, the bitterness of which slightly contrasts against the supersweet toffee exterior.

Studded with slivered almonds and sandwiched with bittersweet, dark chocolate, these toffee wafers are perfect for a no-frills dessert.

These cookies are nothing short of spellbinding—one bite and you’ll be a forever fan. My favorite way to eat them is as the basis for ice cream sandwiches: I spread slightly softened coffee or vanilla ice cream between two of the cookies and refreeze for at least a couple hours. They’re small but very rich; one sandwich definitely does the trick for dessert.

You can also crumble them over your favorite ice cream as a crispy topping or use them to turn up the volume on s’mores by the campfire.

Similar cookies are available from other retailers, and you can even make our version at home. But it’s hard to beat the simplicity, convenience, and price when you pick them up at Trader Joe’s; one dozen cookies will only set you back around $4.

Can you freeze laceys cookies?

Convenience. The cookies come in a resealable plastic container that you can easily pop in the freezer and these do freeze well! The best before date on the cookies is about three months from the date I purchased them. Also the container of cookies smells AMAZING when you open the lid.
